باذنجان صغير، محشي يدوياً بالجوز والفليفلة الحمراء الحلوة والثوم، ومغمور في الزيت حتى ينضج طعمه على مهل. نختار أصغر الحبّات فقط، بين 0 و4.5 سم لكل حبة. افتح المرطبان وقدّمه مع اللبنة والخبز على الفطور، أو ضمن طبق مقبّلات.

Small eggplants, hand-stuffed with walnuts, sweet red pepper and garlic, then left to cure under oil. We select only the smallest ones, 0 to 4.5cm each. Open the jar and put it out with labneh and bread at breakfast, or on a mezze board.
